Job Description:

Dixie Brewing is seeking an experienced and nimble production-brewing manager to lead us in the creation of top quality beer and FMBs. Dixie is set to commission a 100-bbl, 4-vessel Huppmann brewhouse in an 85,000 square foot brewing facility in New Orleans, LA in 2H-2019. We are looking for someone who can complement our long-term vision with his or her productions skillset. The right candidate will be responsible for the daily operation of both a 100-bbl and 15-bbl brewhouse and all equipment involved in the production of a variety of beer styles - in strict adherence to Dixie Brewing’s process, quality and safety standards.
The right person will have the ability to maintain consistency, quality, and efficiencies throughout the production process, while fostering a positive teamwork environment. A thorough competency in all aspects of beer production including grain handling, yeast management, filtration, sanitation, packaging and QA/QC required. Knowledge of and creation of brewhouse standard operation procedures is necessary.
Primary Functions:
The Director of Brewery Operations reports to Dixie’s General Manager and leads all process and production functions related to brewing, cellaring, packaging, operational maintenance, and quality assurance.  Responsibilities include managing and directing daily activities, oversight of sourcing for all brewing materials (including chemicals and sanitation), constantly seeking innovations in the development process, and continually improving methods to positively affect quality, consistency and efficiency.  The Director of Brewing Operations will also work with management, sales and marketing teams on quarterly strategic, innovation and branding initiatives.
  • Oversee and monitor daily plant operations, providing assistance when necessary
  • Oversight of the entire brewing process from milling to readying liquids for filling and packaging
  • Oversight of ensuring all safety protocols are observed in brewing and cellaring; reinforce a safety culture and attitude in plant operations at all times
  • Management of the brewhouse and cellar teams
  • Oversight of tracking and recording key measurements during the entire brewing process
  • Oversight and improvements to yeast management (harvesting, pitching, storage)
  • Raw materials procurement, management and vendor relationships
  • Offer insight on CIP and sanitization improvements and energy and water conservation
  • Creation and oversight of all brewhouse, cellar, packaging, and quality SOP’s
  • Oversight of data collection in brewhouse software environment
  • Responsible for helping to identify brewhouse equipment, facilities and talent to meet future growth projections
  • Work and communicate well across all levels of a brewery operation (management, packaging, customer, suppliers, etc.)
  • Oversight for finished liquid QA/QC working closely with QA/QC manager
  • Manage collection of data relative to beer and cellaring QA to furnish to QA/QC manager
  • Represent Dixie Beer at industry technical events, conferences, and marketing events
  • Comply with all safe chemical handling procedures including personal protection equipment such as gloves and goggles
  • Oversight of brewhouse, cellar, and packaging sanitation logs

Job Requirements:

  • Must be able to bend, squat, kneel, push, pull and walk on uneven surfaces on an occasional basis
  • Must be able to climb stairs both inside and outside
  • Occasionally lift up to 60 lbs
  • Ability to work in a brewery environment which may be loud, slick, humid, hot and cold
  • Solid working knowledge of Microsoft Word, Excel, PowerPoint and Outlook
  • Ability to create a strategy to implement continual improvements in brewing and packaging processes including automation to meet demand and to improve consistency, quality and efficiency
  • Demonstrated ability to create and deliver engaging, straight forward, and detail-oriented presentations to a wide variety of audiences
Education, Experience and Skills:
  • Prior experience on a minimum 30-barrel brewhouse in a full production brewery
  • A minimum of 8 years practical, professional brewing, packaging, maintenance and quality control experience
  • Prior management and leadership experience required
  • Experience creating, experimenting and brewing multiple styles of beer
  • Prior knowledge of barrel-aging and brewing sours is a plus
  • Prior knowledge of Flavored Malt Beverage (FMB) productions is a plus
  • In depth knowledge of yeast strains, hop varieties, grain varieties, grain roasts, etc.
  • Ability to communicate effectively
  • Ability to work in a fast-paced and constantly changing work environment
  • Writing and math skills are necessary to accurately complete a dilution calculation, volume, flow, density, weight, length, pressure and other unit conversions, calculate beer volumes/losses and alcohol content
  • Strong work ethic and self-starter
  • Excellent interpersonal skills and team collaboration
